Carrots are a very popular ingredient for making perfect sweet delights. Across different cultures, desserts made with carrots can be found, for example the delicious Carrot cakes or the Indian Gajar Ka Halwa (in Bengali : Gajorer Halwa). So how about the second one cooked in a very easy way without the hassles. It is also rapid to be served and is as delicious as both the carrot cakes and the Gajar ka Halwa.
This dish is gluten free, and much lighter in terms of calories than the authentic Indian Gajar ka Halwa. You can try it when you are in a hurry or is lazy to grate carrots but have a sudden craving for sweet desserts. I bought the grated carrots from a French brand Florette but you can use any brand that you can find, they are perfect for this dish.
You can see in this recipe that the butter initially had been simmered to obtain the clear fat and leave out the solid residues. In fact this process of clarifying butter is used to make Ghee which is used in many Indian dishes. You can follow this procedure; store the remaining clarified butter, for later use.
Ingredients
Butter : 60 grams
Grated Carrots : 125 grams
Brown sugar: 1/4 cup
Grilled almond flakes : 1/2 cup
Raisins (golden) : 1/2 cup
Cinnamon powder : 2 teaspoons
Almond milk : 1/2 cup
Sugar : 1/3 cup
Procedures
Take the butter in a non-stick pan (here I used 120 grams to make my ghee for later. You can do it like me, or just use the quantity needed for this recipe (60 grams)).
Turn on the heat. Once it melts let it simmer.
Wait for the butter to change color to golden brown.
You will see a froth appearing. When the froth settles down, turn off the heat.
Collect the liquid fat from the top of the pan in a bowl. Discard the milk solids which are at the bottom of the pan.
Transfer the liquid clarified butter to a nonstick sauce pan and add the carrots to it.
Saute nicely so that each strand of carrot gets coated with butter.
Add the brown sugar.
Stir well.
Add the raisins and almond flakes.
Add the cinnamon powder.
Add the sugar.
Mix all the ingredients nicely. The carrots will be bubbling in sugary syrup.
Now add the almond milk.
Stir and let it simmer for 7 minutes.
All the liquid must be absorbed by this time. If not stir it to evaporate the liquid.
When the dish is ready it will look like this. The sugar syrup makes the carrot strands stick to each other.
Serve it warm in your own style.
