A simple weekend morning, Mitra had gone out to get the regular stuff from the supermarket and I was sitting around doing nothing, reading an already read short story by Edgar Allan Poe, when the idea to invent a weekend brunch recipe came upon me. Thus was born the dish POE, rather an acronym of Pancake Omelet Envelope. This can be thought of as a sequel to my quick and easy brunch ideas, the sausage cup cakes posted earlier on my blog. So here is the original recipe of POE.

Ingredients
Eggs : 5
Bell pepper : 1/2
Onion : 1/2
Flour: 1 cup
Unsalted butter : 5 grams
Salt: 1 teaspoon
The ingredients are for two such envelopes.
Procedure
Take the flour in a bowl and add 1/2 teaspoon salt to it.
Add the eggs to the bowl.
Start mixing it with the help of a fork. Initially small lumps may appear. Smash them against the wall of the bowl with the fork, until a smooth consistency has been achieved.
Add chopped onion to the bowl.
Add chopped bell pepper to the bowl.
Mix well.
Now season it again with 1/2 a teaspoon of salt.
Mix well. The final mixture will look like this.
Now butter the nonstick pan.
Let the butter melt.
Now pour half of the mixture to the pan.
Turn the pan with the help of your wrist so that it fills the diameter of the pan. It will look like this.
Cook in medium heat for 5 minutes.
When the sides of the omelet starts to separate from the pan and the middle part has solidified, fold the omelet like an envelope.
Rest the omelet for a minute and then transfer it to a plate.
Your Pancake omelet envelope (POE) is ready. As Allen Poe had written "All that we see or seem is but a dream within a dream.", All that we eat or gulp is but flavors within an envelope.
